For those who aren't familiar, Ikan Masak Kunyit Lengkuas is a traditional Malaysian dish that features a flavorful mix of spices, including turmeric and ginger. And let me tell you, the combination is absolutely divine!

Ingredients

  • 1 lb ikan tenggiri (Spanish mackerel)
  • 1 tsp tamarind paste
  • 2 cups coconut milk
  • 2 stalks lemongrass, bruised
  • 1 tbsp turmeric powder
  • 2 tbsp ginger, sliced
  • 2 tbsp garlic, chopped
  • 2 tbsp shallots, chopped
  • 3-4 red chillies, sliced
  • 1 tsp salt
  • 2 tbsp oil

Instructions

  1. Clean and cut the ikan tenggiri into desired size.
  2. Combine the turmeric powder, tamarind paste and salt, then rub the mixture onto the ikan tenggiri. Let it marinate for 30 minutes.
  3. Heat oil in a pot, and saute the garlic, shallots, ginger and chillies until fragrant.
  4. Stir in the coconut milk and lemongrass, and bring it to a boil.
  5. Add in the marinated ikan tenggiri, and let it cook for 10-15 minutes (depending on the thickness of the fish) or until the fish is cooked through.
  6. Serve hot with steamed rice and enjoy!
